Birthday Soda Can Cupcakes

It’s my birthday week and my friend Tess made me the cutest birthday soda can cupcakes!! What are soda can cupcakes you ask? They are the easiest cupcakes ever, and they have less calories than traditional cupcakes. I won’t go as far as saying they’re healthy, but they are the lesser of two evils.

The best part about soda can cupcakes is you can make so many different varieties and flavors. All you need is a box of cake mix and a 12oz can of soda. No eggs and no oil needed, just the mix and a can, that’s it! We made funfetti cupcakes with Zevia cream soda. I love this soda because it’s zero calorie, made with natural sweetener – no sugar, and it tastes amazing!

Mix & Match Cupcake Flavors

*You can use any flavor of cake mix and any flavor of soda. I also like to do chocolate cake mix with a Dr. Pepper type of soda, Zevia has one called Dr. Zevia if you want to stick with this type of soda.

Ingredients:

12oz can of Zevia cream soda

1 box of Funfetti cake mix

1 tub of white frosting*

Pink food coloring (optional)

Sprinkles or sugar beads for decoration (optional)

*You can also use cool whip to save on sugar and calories

Follow the baking instructions on the back of the box to bake the cupcakes. Then let them cool for at least 20 minutes, and frost!

Pro tip: use a ziplock bag to pipe. Just snip the corner and you have yourself a homemade piping bag!

Super pro tip:

Take off the bottom of the cupcake and place it on top to create a cupcake sandwich. I swear this is the only way to eat cupcakes!
